Sausage & Bean Casserole

Ingredients

  • Ingredients:

    1 x teaspoon olive oil

    1⁄2 onion

    1⁄4 stick of celery

    4 slices of yellow pepper

    4 slices of red pepper

    30g chorizo

    2 pork sausages

    1⁄2 clove of garlic

    1⁄2 teaspoon of smoked paprika

    1⁄2 teaspoon of cumin seeds, whole or ground

    1⁄2 teaspoon of thyme

    200g tinned tomatos.

    1⁄2 vegetable. stock cube

    172g tinned cannellini beans

    Sprinkle black pepper

How to make it.

Method

  • STEP 1

  • Heat olive oil olive in a pot.

  • STEP 2

  • Add chopped onion and cook gently for 5minutes.

  • STEP 3

  • Add finely chopped celery, yellow pepper, red pepper and cook for a further 5 mins.

  • STEP 4

  • Add the chorizo and sausages, fry for 5 minutes.

  • STEP 5

  • Stir in garlic, smoked paprika, cumin and thyme then continue cooking for 1 – 2 min.

  • STEP 6

  • Add tinned tomatoes and bring to a simmer.Crumble in the chicken stock cube and stir.

  • STEP 7

  • Cook for 40 minutes. Stir in drained and rinsed cannellini beans and cook for a further five minutes.

  • STEP 8

  • Taste test, season with black pepper and add any additional seasoning if you need it.

  • STEP 9

  • Serve with salad or vegetables.
