Sausage & Bean Casserole
Ingredients
Ingredients:
1 x teaspoon olive oil
1⁄2 onion
1⁄4 stick of celery
4 slices of yellow pepper
4 slices of red pepper
30g chorizo
2 pork sausages
1⁄2 clove of garlic
1⁄2 teaspoon of smoked paprika
1⁄2 teaspoon of cumin seeds, whole or ground
1⁄2 teaspoon of thyme
200g tinned tomatos.
1⁄2 vegetable. stock cube
172g tinned cannellini beans
Sprinkle black pepper
How to make it.
Method
STEP 1
Heat olive oil olive in a pot.
STEP 2
Add chopped onion and cook gently for 5minutes.
STEP 3
Add finely chopped celery, yellow pepper, red pepper and cook for a further 5 mins.
STEP 4
Add the chorizo and sausages, fry for 5 minutes.
STEP 5
Stir in garlic, smoked paprika, cumin and thyme then continue cooking for 1 – 2 min.
STEP 6
Add tinned tomatoes and bring to a simmer.Crumble in the chicken stock cube and stir.
STEP 7
Cook for 40 minutes. Stir in drained and rinsed cannellini beans and cook for a further five minutes.
STEP 8
Taste test, season with black pepper and add any additional seasoning if you need it.
STEP 9
Serve with salad or vegetables.
